Method :
- Mix flour and water in a bowl to make a
dough that is pliable yet not too sticky
- Add ghee or butter and turn the mixture
out onto a floured board and knead by hand for 10 - 15 minutes.
- Roll into a ball then cover with a damp
cloth and set aside for at least 1 - 2 hours
- Knead the dough again for 3 - 4 minutes,
then break into pieces the size of a golf ball.
- Flatten into a circle with your hand,
then roll out into a bigger circle of approx. 20 cm in diameter
- Heat a heavy griddle or a flat frying
pan until very hot.
- Put on a chapati and cook until brown
spots (burnt spots) appear underneath. Turn over and cook the other side
in similar style, pressing on the top of the chapati with a clean cloth
to help make air bubbles form and keep the chapati light.
- As each chapati is cooked, wrap in a
clean cloth to keep warm.
- Serve with any type of curried, dal or
vegetables
