White Fungus With Melon Balls Recipe - Dessert

Although white fungus is virtually
tasteless, it is prized for its texture as well as its health-giving properties.
Serve warm or chilled.
|
Ingredients :
| 750 g |
Water |
| 90 g |
Rock sugar |
| 90 g |
Hami melon or rock melon or honeydew |
| 50 g |
White fungus, dried |

Method :

Wash fungus well,
then soak in warm water for at least an hour. Remove the stems and any tough portions and
cut in bite-sized pieces and set aside.

Heat the rock sugar
and water in a pan, stirring until sugar dissolves, then pour into a bowl with the white
fungus.

Cover the bowl and
put into a steamer for approx 1 - 2 hours until the fungus is soft. Leave to cool then
chill.

Before serving, carve
out small balls of the melon and add to the chilled fungus and serve in small individual
bowls.
