Red Bean Soup Recipe - Dessert

The ever popular red bean soup that is
usually consumed as a dish in itself as much as it is served as a dessert after a
meal.
|
Ingredients :
| 250 g |
Red azuki beans |
| 1 liter |
Water |
| 50 g |
Dried lotus nuts |
| 1 strip |
Fresh orange peel |
| 1 cup |
Sugar |

Method :

If using dried lotus
nuts soak in hot water for 1 - 2 hours, drain, peel and used a sharp instrument to push out
the bitter center core.

Soak the red beans in
warm water for 30 minutes, then drain and combine with orange peel and water and simmer
gently, covered, for 1 hour.

Add the lotus nuts
and cook for another hour.

Add sugar to taste
and stir until dissolve, serve warm.
