Red Bean Soup Recipe - Dessert

(lian zi hong dou sha)

The ever popular red bean soup that is usually consumed as a dish in itself as much as it is served as a dessert after a meal.

 

Ingredients :

 

250 g Red azuki beans
1 liter Water
50 g Dried lotus nuts
1 strip Fresh orange peel
1 cup Sugar
 

Method :

  • If using dried lotus nuts soak in hot water for 1 - 2 hours, drain, peel and used a sharp instrument to push out the bitter center core.

  • Soak the red beans in warm water for 30 minutes, then drain and combine with orange peel and water and simmer gently, covered, for 1 hour.

  • Add the lotus nuts and cook for another hour.

  • Add sugar to taste and stir until dissolve, serve warm.
