Red Bean Pancakes Recipe - Dessert

Ingredients :
| 150 g |
All purpose flour |
| 125 g |
Red bean paste |
| 1/4 tsp |
Custard powder |
| 1 |
Egg |
| - |
Oil for shallow-frying |
| - |
Water |

Method :

Put in a bowl, the
flour, custard powder, egg and some water to make a batter the consistency of a thin cream.

Heat up wok and give
it a swirl with a little oil inside so that it covers the inside of the wok.

Pour in approx. a
quarter cup of the batter and swirl the wok around to make a thin pancake.

Cook until the top of
the pancake has set and the underside is golden.

Remove, set aside
until the batter is used up.

Place pancake on a
flat surface, browned side up, then spoon the red bean paste onto the center of the pancake
and spread it a little. Fold the edges to enclose the paste.

Heat a little oil in
the wok and fry the stuffed pancake until golden brown.

Cut into smaller
pieces and serve.

NOTE: If
canned red bean paste is not available, soak 1/2 cup of red beans for 2 hours
and steam until soft with s strip of dried orange peel. Mash it and add some
sugar to taste. |
