Red Bean Pancakes Recipe - Dessert

Ingredients :

 

150 g All purpose flour
125 g Red bean paste
1/4 tsp Custard powder
1 Egg
- Oil for shallow-frying
- Water
 

Method :

  • Put in a bowl, the flour, custard powder, egg and some water to make a batter the consistency of a thin cream.

  • Heat up wok and give it a swirl with a little oil inside so that it covers the inside of the wok.

  • Pour in approx. a quarter cup of the batter and swirl the wok around to make a thin pancake.

  • Cook until the top of the pancake has set and the underside is golden.

  • Remove, set aside until the batter is used up.

  • Place pancake on a flat surface, browned side up, then spoon the red bean paste onto the center of the pancake and spread it a little. Fold the edges to enclose the paste.

  • Heat a little oil in the wok and fry the stuffed pancake until golden brown.

  • Cut into smaller pieces and serve.

 

NOTE: If canned red bean paste is not available, soak 1/2 cup of red beans for 2 hours and steam until soft with s strip of dried orange peel. Mash it and add some sugar to taste.
