The story the lotus: The lotus has a special association for the
Buddhists. It was told that Gautama Buddha likened man striving to achieve
goodness to a beautiful lotus bloom rising unblemished from the muddy
bottom of a lake.

Sesame seed

Lotus roots of about 10 - 15 cm long
White rice vinegar
Sugar
Two
'pinches' of the seeds, lightly roasted and crushed
Required taste

Method :

Peel lotus root and cut crosswise in 1/2 cm thick slices.

Heat water in pan or wok until boiling, the toss in the lotus root
slices and blanch for approx. 5 to 8 seconds. Drain and rinse in cold
water.

Toss the lotus root slices in a bowl with the rice vinegar, then arrange
on a salad plate/bowl

Sprinkle with sugar, salt and crushed sesame seeds and serve
immediately. (Sesame seeds can be substituted with crushed
groundnuts treated similarly or omitted altogether)
