Duck Giblets With Salted Mustard Cabbage Recipe

(gong cai xian shen pian)

Duck or chicken giblets are usually discarded by Western cooks or relegated to the stockpot; but to the Chinese cooks, giblets are widely sought for their firm texture and flavor. The word 'gong' in the name of this dish means gratuity to the emperor.

 

Ingredients :

 

300 g Giblets of duck or chicken
100 g Salted mustard cabbage, soaked, squeezed and sliced
4 pieces While star anise
4 pieces Bay leaves
1 tsp Sesame oil
2 tsp Salt
 

Method :

  • Prepare giblets by cleaning in water and drain, then put in a pan with salt, star anise and bay leaves.

  • Cover with water, bring to a boil and simmer for approx. 30 minutes or until tender.

  • Remove giblets, drain and keep refrigerated until required.

  • To serve, slice the giblets thinly, then mix salted cabbage and sesame oil and garnish with a little sliced red chili (optional).

  • Serve cold.
