Duck Giblets With Salted Mustard Cabbage Recipe
(gong cai xian shen pian)

Duck or chicken giblets are usually
discarded by Western cooks or relegated to the stockpot; but to the Chinese cooks,
giblets are widely sought for their firm texture and flavor. The word 'gong'
in the name of this dish means gratuity to the emperor.

Ingredients :
| 300 g |
Giblets of duck or chicken |
| 100 g |
Salted mustard cabbage, soaked, squeezed and sliced
|
| 4 pieces |
While star anise |
| 4 pieces |
Bay leaves |
| 1 tsp |
Sesame oil |
| 2 tsp |
Salt |

Method :

Prepare giblets by
cleaning in water and drain, then put in a pan with salt, star anise and bay leaves.

Cover with water,
bring to a boil and simmer for approx. 30 minutes or until tender.

Remove giblets, drain
and keep refrigerated until required.

To serve, slice the
giblets thinly, then mix salted cabbage and sesame oil and garnish with a little sliced red
chili (optional).

Serve cold.
