Cold Chengdu Noodles Recipe

(chengdu leng mian)

RECIPES OF CHINA

 

Ingredients :

 

500 g Fresh wheat-flour noodles, boiled, drained and chilled
1 cup Beansprouts, blanched for a few seconds and chilled
1 stalk Spring onions, finely sliced (scallions)
 

The Sauce

 
3 tbsp Black soy sauce
2 tbsp Ginger, finely chopped
1 tbsp Garlic, finely chopped
1 tbsp Sesame paste
1tbsp Peanut oil
1 tbsp Peanut butter
2 tsp Black rice vinegar
2 tsp Sugar
1tsp Sesame
1 tsp Chili oil
 

Method :

  • Combine all the sauce ingredients in a bowl and mix well.

  • Add noodles and stir to coat the noodles with the sauce.

  • Add beansprouts and mix well with chopsticks or a fork, taking care not to break the sprouts.

  • Divide equally among serving bowls and garnish with the spring onions.
