Cold Chengdu Noodles Recipe

Ingredients :
| 500 g |
Fresh wheat-flour noodles, boiled, drained and
chilled |
| 1 cup |
Beansprouts, blanched for a few seconds and chilled |
| 1 stalk |
Spring onions, finely sliced (scallions) |
| The Sauce |
|
| 3 tbsp |
Black soy sauce |
| 2 tbsp |
Ginger, finely chopped |
| 1 tbsp |
Garlic, finely chopped |
| 1 tbsp |
Sesame paste |
| 1tbsp |
Peanut oil |
| 1 tbsp |
Peanut butter |
| 2 tsp |
Black rice vinegar |
| 2 tsp |
Sugar |
| 1tsp |
Sesame |
| 1 tsp |
Chili oil |

Method :

Combine all the sauce
ingredients in a bowl and mix well.

Add noodles and stir
to coat the noodles with the sauce.

Add beansprouts and
mix well with chopsticks or a fork, taking care not to break the sprouts.

Divide equally among
serving bowls and garnish with the spring onions.
