Chinese Chicken Stock Recipe

RECIPES OF CHINA

 

Ingredients :

 

1 1/2 kg Large chicken pieces
2 1/2 liters Water
1 stalk Celery with leaves still attached, chopped
5 cm Ginger, bruised
 

Method :

  • Plunge the chicken pieces or one large whole chicken into a large pan of boiling water and simmer for approx. 1 - 2 minutes.

  • Discard water and refill pan with water and all the other ingredients.

  • Bring to a boil and simmer gently, uncovered, for approx. 2 hours.

  • Constantly remove scum or impurities as they rise to the top of the pan.

  • Strain stock through cheesecloth and keep for future requirement.

 

TIP: Large quantities of the chicken stock can be prepared and kept frozen in smaller portion for future use.
