Chinese Chicken Stock Recipe

Ingredients :
| 1 1/2 kg |
Large chicken pieces |
| 2 1/2 liters |
Water |
| 1 stalk |
Celery with leaves still attached, chopped |
| 5 cm |
Ginger, bruised |

Method :
-
Plunge the chicken
pieces or one large whole chicken into a large pan of boiling water and simmer for approx. 1
- 2 minutes.
-
Discard water and
refill pan with water and all the other ingredients.
-
Bring to a boil and
simmer gently, uncovered, for approx. 2 hours.
-
Constantly remove
scum or impurities as they rise to the top of the pan.
-
Strain stock through
cheesecloth and keep for future requirement.
| TIP:
Large quantities of the chicken stock can be prepared and kept frozen in smaller
portion for future use. |
