Bamboo Shoots With Mushrooms Recipe

(xiang gu chao jiao bai)

A special type of bamboo is used for this dish and it is found in Southern China which has an excellent texture and flavor. If fresh jiao bai is not available, substitute with canned version.

 

Ingredients :

 

400 g Fresh bamboo shoots (jiao bai)
10 pieces Black mushrooms, soaked
2 tsp Cooking oil
2 tsp Garlic, finely chopped
1 tsp Chinese rice wine
1 tsp Chicken stock powder (available in stores)
1 tsp Sugar
1/2 tsp Salt
 

Method :

  • If fresh bamboo shoots are used, peel off the outer layer and slice coarsely. If canned bamboo is used, simmer in boiling water for 5 minutes, drain then slice coarsely.

  • Heat oil in wok and stir-fry garlic and mushrooms until fragrant, then add in the bamboo shoots and all the ingredients and stir-fry for approx, 2 minutes.

  • Serve straight from the wok to the dining table.
