Transparent Savory-Rice Pancakes Recipe

RECIPES OF BURMA

 This delicious and light crepes can be filled with a variety of different ingredients.

Ingredients :

300 g Rice flour
630 ml Cold water
100 g Cowpeas or garden peas
2 tbsp Peanut oil
1 tsp Salt
1 tsp Ginger, finely chopped
1/4 tsp Baking Soda
3 stalks Spring onions (scallions), sliced

 

Method :

  • Put rice flour, salt, water, baking soda and ginger in a bowl and mix well.
  • Place a frying pan over medium heat and pour 4 - 5 tablespoons of rice paste into the pan.
  • Lightly brush the pancake with a little oil and sprinkle on cowpeas and spring onions (scallions).
  • Cook for 3 - 4 minutes till underside is crisp then fold in half and cook for another minute on each side.
