Transparent Savory-Rice Pancakes Recipe

This
delicious and light crepes can be filled with a variety of different
ingredients.

Ingredients : |
| 300 g |
Rice flour |
| 630 ml |
Cold water |
| 100 g |
Cowpeas or garden peas |
| 2 tbsp |
Peanut oil |
| 1 tsp |
Salt |
| 1 tsp |
Ginger, finely chopped |
| 1/4 tsp |
Baking Soda |
| 3 stalks |
Spring onions (scallions), sliced |
Method :
- Put rice flour, salt, water, baking soda and ginger in a
bowl and mix well.
- Place a frying pan over medium heat and pour 4 - 5
tablespoons of rice paste into the pan.
- Lightly brush the pancake with a little oil and sprinkle on
cowpeas and spring onions (scallions).
- Cook for 3 - 4 minutes till underside is crisp then fold in
half and cook for another minute on each side.
