Pork And Mango Curry Recipe

The unique feature of this curry is
that its flavor varies according to the type of mango used. Serve with plain
rice and an accompanying vegetable dish or salad.

Ingredients : |
| 500 g |
Pork loin, cubed |
| 300 ml |
Water |
| 2 tbsp |
Young unripe mango, peeled and shredded |
| 3 cloves |
Garlic, minced |
| 3 pieces |
Dried red chilies, soaked and coarsely
ground |
| 1 tbsp |
Fish sauce |
| 2 tbsp |
Cooking oil |
| 3 tbsp |
Onions, minced |
| 1 tsp |
Ginger, ground |
| 1 tsp |
Salt |
Method :
- Marinate pork cubes in fish sauce for at least 15 minutes.
- Heat oil in wok or pan and saute onion and garlic for a few
minutes or until fragrant.
- Add ginger and chili and continue to fry for another 2
minutes.
- Stir in pork, mango and salt and mix well, then cover and
cook over low heat for approx. another 15 minutes, stirring occasionally.
- Add water and allow to simmer over low heat for approx. 20
minutes, then serve.
