Ingredients :

250 - 300 ml
Medium size catfish, gutted and cut in 4 or 5 pieces including the head.
Tamarind pulp soaked in 1/2 cup water
Fish sauce
Onion, minced
Garlic, crushed
Chili flakes
Sugar
Oil
Chopped coriander (cilantro) leaves
Salt
Water
Marinate the pieces of catfish in salt for approx. 10 - 15 minutes
Transfer fish to pan/wok, add water and fish sauce, cover and simmer for 10 minutes
Squeeze soaking tamarind pulp into pan/wok. Strain and discard the solids
Heat oil in separate pan/wok and saute onions and garlic until fragrant, then stir in the sugar and chili flakes.
Transfer fish and tamarind water over, cover and cook for approx another 10 minutes
Garnish with coriander and serve.
