Catfish in Tamarind Sauce Recipe ( Ngaku Chet )

Ingredients :

250 - 300 ml

 

Medium size catfish, gutted and cut in 4 or 5 pieces including the head.

Tamarind pulp soaked in 1/2 cup water

Fish sauce

Onion, minced

Garlic, crushed

Chili flakes

Sugar

Oil

Chopped coriander (cilantro) leaves

Salt

Water

Method :
  • Marinate the pieces of catfish in salt for approx. 10 - 15 minutes

  • Transfer fish to pan/wok, add water and fish sauce, cover and simmer for 10 minutes

  • Squeeze soaking tamarind pulp into pan/wok. Strain and discard the solids

  • Heat oil in separate pan/wok and saute onions and garlic until fragrant, then stir in the sugar and chili flakes.

  • Transfer fish and tamarind water over, cover and cook for approx another 10 minutes

  • Garnish with coriander and serve.
