This
dish is quite popular as a finger food and is also a good accompaniment to a
variety of dished, like the famous Mohinga - a noodle soup with
fish sauce.
Ingredients :
250 g
Raw shrimps
2 stalks
Spring onions
2 portions
Egg whites
1 tsp
Salt
1 tsp
Sesame oil

Corn flour
-
Oil for frying
Method :
Chop shrimps, then pound to a smooth paste.
Season paste with salt, sesame oil and finely chopped spring
onions and then knead well to mix.
Bind with egg whites and a little corn flour and mash for
approx. 1 - 2 minutes.
Heat sufficient oil and put in walnut-sized balls of the
mixture which have been lightly coated with corn flour.
Fry over moderate heat until lightly browned, removed and
drained well on a kitchen paper.
Place on a shallow serving platter and provide chili or some
spicy sauce to accompany.
