Burmese Rice With Salted Dried Fish Recipe

Long grain rice |
| 75 g |
Salted dried fish, soaked |
| 10 cm |
Lemongrass stalk, chopped |
| 1 piece |
Medium-sized onion, minced |
| 3 cloves |
Garlic, minced |
| 2 pieces |
Fresh red chilies, minced |
| 650 ml |
Water |
| 2 tbsp |
Fish sauce |
| 1 tbsp |
Lime juice |
| 1 1/2 tsp |
Turmeric powder |
| 3 tbsp |
Cooking oil |

Sliced shallots and fresh chilies to
garnish |
Method :
- Wash rice through several changes of water and drain well,
then transfer to a deep saucepan.
- Add lemongrass and sufficient water to cook the rice, then
bring to a boil.
- Cover the rice, reduce heat to 'low' and allow rice to
continue to cook until tender and liquid absorbed.
- Combine onion, garlic, turmeric, the soaked salted dried
fish and chili to a paste, then add oil, fish sauce and lime juice.
- Stir the mixture into a rice, adjust for the salt and
continue to cook, stirring with a pair of chopstick for another 4 minutes.
- Remove from heat and allow to stand, covered, for approx. 10
minutes.
- Spoon into a serving dish and garnish with sliced shallot
and chilies.
