Burmese Rice With Salted Dried Fish Recipe

RECIPES OF BURMA

 

Ingredients :

350 g Long grain rice
75 g Salted dried fish, soaked
10 cm Lemongrass stalk, chopped
1 piece Medium-sized onion, minced
3 cloves Garlic, minced
2 pieces Fresh red chilies, minced
650 ml Water
2 tbsp Fish sauce
1 tbsp Lime juice
1 1/2 tsp Turmeric powder
3 tbsp Cooking oil
- Salt
- Sliced shallots and fresh chilies to garnish

 

Method :

  • Wash rice through several changes of water and drain well, then transfer to a deep saucepan.
  • Add lemongrass and sufficient water to cook the rice, then bring to a boil.
  • Cover the rice, reduce heat to 'low' and allow rice to continue to cook until tender and liquid absorbed.
  • Combine onion, garlic, turmeric, the soaked salted dried fish and chili to a paste, then add oil, fish sauce and lime juice.
  • Stir the mixture into a rice, adjust for the salt and continue to cook, stirring with a pair of chopstick for another 4 minutes.
  • Remove from heat and allow to stand, covered, for approx. 10 minutes.
  • Spoon into a serving dish and garnish with sliced shallot and chilies.
