Simple Roast Chicken Recipe

Ingredients

1 Whole chicken of 1.25kg - 1.5kg, cleaned
1 Lemon, halved
15 g Butter, softened

 

Method :

  • Squeeze the juice from a halved lemon over the chicken, then push the lemon halves into the body cavity.

  • Smear the softened butter over the breast of the chicken and place it on a rack or shallow baking dish.

  • Commence roasting in a pre-heated oven at 375oF / 190oC / Gas 5 for approx. 1 1/4 hour.

  • Skim oil fat from the roasting juices, then add 120ml water and bring to a boil, stirring well to mix in the browned bits. Allow to simmer until slightly thick.

  • Season with salt and pepper, and serve this sauce with the chicken.
