Squeeze the juice from a halved lemon over the
chicken, then push the lemon halves into the body cavity.
Smear the softened butter over the breast of the
chicken and place it on a rack or shallow baking dish.
Commence roasting in a pre-heated oven at 375oF
/ 190oC / Gas 5 for approx. 1 1/4 hour.
Skim oil fat from the roasting juices, then add
120ml water and bring to a boil, stirring well to mix in the browned bits. Allow to simmer
until slightly thick.
Season with salt and pepper, and serve this
sauce with the chicken.
