Oriental Stir-Fry Vegetable Noodles Recipe

For a
refreshing change, instead of the Asian yellow noodles, you can substitute with
Italian egg pasta, fresh or dried.

Ingredients |
| 500 g |
Yellow egg noodles or the thin Italian tagliarini
noodles |
| 120 g |
Dried shiitake mushrooms, soaked in
water, thinly sliced |
| 1 piece |
Red onion, thinly sliced |
| 3 tbsp |
Sesame oil |
| 3 tbsp |
Dark soy sauce (not thick) |
| 1 tbsp |
Vinegar |
| 2 tsp |
Castor |

Salt to season |

Celery leaves to garnish |
Method :

If using yellow egg noodles, blanch in slightly
salted boiling water, drain and set aside. If you choose to cook with Italian noodles, then
cook the noodles according to the instructions on the pack.

Heat wok with one tablespoon of sesame oil and
stir-fry the onions first then the mushrooms for approx. 2 minutes.

Add the noodles and drizzle in the soy sauce,
vinegar, sugar and adjust the salt to taste, stirring constantly to mix well.

After approx 1 minute, add in the remaining
sesame oil and serve, garnish with celery leaves.
