Combination Fried Noodle Recipe

(Chow Mein)

Ingredients

450 g Yellow egg noodles
110 g Watercress, leaves stripped from the stem
75 g Shrimps, peeled and deveined
50 g Pork fillet, sliced
50 g Pig liver, sliced
50 g Squid, prepared and sliced
50 g Mussels
2 cloves Garlic, chopped
2 stalks Spring onion, cut into short lengths
2 pieces Red chilies, seeded and finely sliced
3 tbsp Cooking oil
3 tbsp Soy sauce
1 tbsp Sesame oil
- Salt and ground black pepper

 

Method :

  • Cook yellow egg noodles in a large pan of boiling water until just tender and drain well.

  • Heat oil in a wok and fry garlic and spring onions for about 30 seconds.

  • Add pork fillet, liver, shrimps, mussels and squids and stir-fry over high heat for approx. 2 mins.

  • Add watercress and chilies and continue to stir-fry for another 3 minutes or until pork is well cooked.

  • Add the noodles, stirring constantly but gently, add the soy sauce, salt and pepper to taste.

  • Cook until noodles are thoroughly heated through, then stir in the sesame oil, mix well and serve immediately.
