Combination Fried Noodle Recipe
(Chow Mein)

Ingredients |
| 450 g |
Yellow egg noodles |
| 110 g |
Watercress, leaves stripped from the
stem |
| 75 g |
Shrimps, peeled and deveined |
| 50 g |
Pork fillet, sliced |
| 50 g |
Pig liver, sliced |
| 50 g |
Squid, prepared and sliced |
| 50 g |
Mussels |
| 2 cloves |
Garlic, chopped |
| 2 stalks |
Spring onion, cut into short lengths |
| 2 pieces |
Red chilies, seeded and finely sliced |
| 3 tbsp |
Cooking oil |
| 3 tbsp |
Soy sauce |
| 1 tbsp |
Sesame oil |
| - |
Salt and ground black pepper |
Method :

Cook yellow egg noodles in a large pan of
boiling water until just tender and drain well.

Heat oil in a wok and fry garlic and spring
onions for about 30 seconds.

Add pork fillet, liver, shrimps, mussels and
squids and stir-fry over high heat for approx. 2 mins.

Add watercress and chilies and continue to
stir-fry for another 3 minutes or until pork is well cooked.

Add the noodles, stirring constantly but gently,
add the soy sauce, salt and pepper to taste.

Cook until noodles are thoroughly heated
through, then stir in the sesame oil, mix well and serve immediately.
