Chicken Fried Noodles Recipe

Fried
noodles with chicken is one of the most popular and favorite noodle dish in the
world. Usually seafood and vegetables are also added variety.

Ingredients |
| 350 g |
Fresh noodles |
| 200 g |
Chicken breast, skinned and boned and
finely sliced |
| 100 g |
Bean sprouts |
| 50 g |
Mangetouts, topped and tailed |
| 50 g |
Ham, finely shredded |
| 2 cloves |
Garlic, finely chopped |
| 4 stalks |
Spring onions, finely chopped |
| 4 tbsp |
Vegetable oil |
| 3 tbsp |
Soy sauce |
| 1 tbsp |
Rice wine |
| 1 tbsp |
Dark sesame oil |
| - |
Salt and freshly ground black pepper. |
Method :

Plunge fresh noodles into rapidly boiling water
for a few seconds to just cook, then drain and set aside.

Place sliced chicken in a bowl and add 2 tbsp of
the soy sauce, the rice wine and sesame oil, allow to marinate for 15 minutes.

Heat part of the oil in a wok to very hot, then
add the chicken mixture and stir-fry for approx. 2 minutes then transfer to a plate and keep
hot.

In the same wok, reheat the remaining oil and
stir in the garlic, mangetouts, bean sprouts and ham and stir-fry for 1 minute then add in
the noodles.

Continue to stir-fry till noodles are heated
through. Add the remaining soy sauce to taste and season with salt and pepper.

Return the marinated chicken and the juice to
the noodle mixture and mix well.

Add in the chopped spring onion and serve.
