Thai Sweet And Sour Pork Recipe

Sweet
and sour pork is traditionally a Chinese dish but the Thais have done so
well that they have given the dish a flavor and identity all its own. This is
the Thai version and taste even better when served over Thai fragrant rice.

Ingredients |

Lean pork |
| 100 g |
Pineapple, cut into small chunks |
| 4 cloves |
Garlic, finely sliced |
| 1 piece |
Small red onion, chopped |
| 1 piece |
Red pepper, seeded and diced |
| 2 pieces |
Tomatoes, cut into wedges |
| 1/2 |
Cucumber, seeded and sliced |
| 2 tbsp |
Vegetable oil |
| 2 tbsp |
Fish sauce |
| 1 tbsp |
Granulated sugar |
| 2 stalks |
Spring onions, cut into short lengths |

Coriander leaves - garnish |

Spring onions, shredded - garnish |

Fresh ground black pepper |
Method :

Prepare pork by slicing into thin strips.

Heat oil in a wok, add garlic and fry until it
starts to turn golden brown, then add the pork slices and fry for another 4 - 5 minutes. Add
onions now.

Season with fish sauce, sugar and ground black
pepper, stir and cook for another 3 - 4 minutes or until the pork is tender.

Add the rest of the vegetables, the pineapple
and spring onions. If mixture looks too dry, add a few tablespoons of water.

Continue to stir-fry for another 2 - 3 minutes
and serve straight away, garnished with coriander leaves and spring onion.
