Category : meat  |  Style : stir-fry  |  Serve : 4 |

Sweet and sour pork is traditionally a Chinese dish but  the Thais have done so well that they have given the dish a flavor and identity all its own. This is the Thai version and taste even better when served over Thai fragrant rice.

Ingredients

350 g Lean pork
100 g Pineapple, cut into small chunks
4 cloves Garlic, finely sliced
1 piece Small red onion, chopped
1 piece Red pepper, seeded and diced
2 pieces Tomatoes, cut into wedges
1/2 Cucumber, seeded and sliced
2 tbsp Vegetable oil
2 tbsp Fish sauce
1 tbsp Granulated sugar
2 stalks Spring onions, cut into short lengths
- Coriander leaves - garnish
- Spring onions, shredded - garnish
- Fresh ground black pepper

Method :

  • Prepare pork by slicing into thin strips.

  • Heat oil in a wok, add garlic and fry until it starts to turn golden brown, then add the pork slices and fry for another 4 - 5 minutes. Add onions now.

  • Season with fish sauce, sugar and ground black pepper, stir and cook for another 3 - 4 minutes or until the pork is tender.

  • Add the rest of the vegetables, the pineapple and spring onions. If mixture looks too dry, add a few tablespoons of water.

  • Continue to stir-fry for another 2 - 3 minutes and serve straight away, garnished with coriander leaves and spring onion.
