Stir-Fried Pork With Lychees Recipe

Crispy
pieces of pork with fleshy lychees makes an unusual stir-fry dish that is ideal
for dinner or any occasions.
|
Ingredients |
| 450 g |
Pork belly or other fatty pork |
| 180 g |
Lychees, peeled, stoned and cut into
slivers |
| 4 stalks |
Spring onions, sliced |
| 2 tbsp |
Hoisin sauce |
| - |
Salt and black pepper |
| - |
Fresh lychees and parsley sprigs to garnish |
Method :

Cut pork belly into bite-sized pieces, then pour
the hoisin sauce over it and allow to marinate for at least 30 minutes.

Heat oil in wok and add the pork belly and
stir-fry for 3 - 4 minutes or until crisp and golden brown.

Add spring onions and stir-fry for another 2
minutes.

Scatter the lychee slivers over the pork,
seasoned well with salt and pepper.

Transfer to a serving platter and garnish with
fresh lychees and parsley.
