Stir-Fried Pork With Lychees Recipe

Crispy pieces of pork with fleshy lychees makes an unusual stir-fry dish that is ideal for dinner or any occasions.

 

Ingredients

450 g Pork belly or other fatty pork
180 g Lychees, peeled, stoned and cut into slivers
4 stalks Spring onions, sliced
2 tbsp Hoisin sauce
- Salt and black pepper
- Fresh lychees and parsley sprigs to garnish

 

Method :

  • Cut pork belly into bite-sized pieces, then pour the hoisin sauce over it and allow to marinate for at least 30 minutes.

  • Heat oil in wok and add the pork belly and stir-fry for 3 - 4 minutes or until crisp and golden brown.

  • Add spring onions and stir-fry for another 2 minutes.

  • Scatter the lychee slivers over the pork, seasoned well with salt and pepper.

  • Transfer to a serving platter and garnish with fresh lychees and parsley.

 

 

Tip: If fresh lychees cannot be obtained, this dish can be made with drained canned lychees.
