RICE WITH BEEF STRIPS RECIPE

| 400g |
Rump steak, finely sliced |
| 200g |
White rice, long grain type |
| 100g |
Mushrooms, chopped |
| 375ml |
Chicken stock |
| 1 piece |
Onion, chopped |
| 1 clove |
Garlic, crushed |
| 1 piece |
Tomato, diced |
| 2 tbsp |
Fresh parsley, chopped |
| 1 tbsp |
Cooking |
- Heat oil in a wok and add in the garlic, onions and
mushrooms and stir-fry for approx. 2 minutes or until the onion has softened.
- Add in the rice, then pour in the chicken stock and stir
through to combine. Bring it to a boil, then reduced heat to 'low' and simmer, covered, for
approx. 10 minutes. Remove the wok from the heat with the cover and allow to stand for
approx. 5 minutes.
- In another wok or pan, cook the slices of rump steak on both
sides thoroughly, then cut into thin strips. Cover and set aside.
- Add the tomato and parsley to the rice and stir the beef
strips through, adjust seasoning and serve.
