PORK WITH RICE STICK NOODLES RECIPE

| 150g |
Thin rice stick noodles |
| 200g |
Pork eye fillet, thinly sliced |
| 50g |
Snow pea, cut lengthwise into
matchsticks |
| 3 cloves |
Garlic, crushed |
| 1 piece |
Carrot, cut into matchsticks |
| 3 tbsp |
Cooking oil |
| 1 tbsp |
Light soy sauce |
| 1 tbsp |
Lime juice |
| 1 tbsp |
Fresh chives, chopped |
| 1 tbsp |
Fresh mint, chopped |
| 2 tsp |
Fine brown sugar |
| 1 tsp |
Fish sauce |
- Prepare the rice noodles by soaking in boiling water for
approx. 5 minutes or until soft, then drain and set aside to dry.
- Heat oil in a wok, then stir-fry garlic and the pork slices
in batches if necessary, until pork is cooked through and browned. Remove, set aside and
keep warm.
- With remaining oil in the wok, stir-fry carrot and snow peas
over high heat for approx. 2 minutes.
- Return the pork slices and the noodles to the wok and toss
everything together.
- Add in the soy sauce, lime juice, brown sugar and fish
sauce. Continue to toss until evenly combined.
- Serve garnished with the chopped chives and mint.

Cooking tip: If rice stick
noodles is not available, you can substitute with fresh rice noodles or
vermicelli, and for variation, try the Asian yellow egg noodles (add a cup of
water to simmer down to half the amount and avoid the 'tossing' !) |
