PORK WITH RICE STICK NOODLES RECIPE

 

FUN & HEALTHY CHILDREN RECIPES IN MINUTES

Fast food for children

 

Ingredients :
150g Thin rice stick noodles
200g Pork eye fillet, thinly sliced
50g Snow pea, cut lengthwise into matchsticks
3 cloves Garlic, crushed
1 piece Carrot, cut into matchsticks
3 tbsp Cooking oil
1 tbsp Light soy sauce
1 tbsp Lime juice
1 tbsp Fresh chives, chopped
1 tbsp Fresh mint, chopped
2 tsp Fine brown sugar
1 tsp Fish sauce

 

Method :
  • Prepare the rice noodles by soaking in boiling water for approx. 5 minutes or until soft, then drain and set aside to dry.
  • Heat oil in a wok, then stir-fry garlic and the pork slices in batches if necessary, until pork is cooked through and browned. Remove, set aside and keep warm.
  • With remaining oil in the wok, stir-fry carrot and snow peas over high heat for approx. 2 minutes.
  • Return the pork slices and the noodles to the wok and toss everything together.
  • Add in the soy sauce, lime juice, brown sugar and fish sauce. Continue to toss until evenly combined.
  • Serve garnished with the chopped chives and mint.

Cooking tip: If rice stick noodles is not available, you can substitute with fresh rice noodles or vermicelli, and for variation, try the Asian yellow egg noodles (add a cup of water to simmer down to half the amount and avoid the 'tossing' !)
