NOODLE PANCAKE WITH SATAY CHICKEN RECIPE

Fast food for children

 

Ingredients :
250g Chicken thigh fillet cut into bite-size chunks
1 packet Instant chicken noodles with the flavor sachet
125ml Cooking oil
185ml Satay sauce in bottles or jars
1 piece Onion, sliced
2 tbsp Fresh chives, chopped
1 tbsp Peanuts, roughly chopped
2 tsp Fresh coriander, chopped

 

Method :
  • Allow instant noodle to soften in a bowl of boiling water, drain and set aside.
  • Place noodles in a bowl, add in the flavor sachet and chives and mix well, then divide in two batches.
  • Heat oil in a wok and fry each batch, flattening out the noodles to form a pancake shape. Turn the pancake over and repeat on the other side. Fry until they are golden and crispy, then drain and keep warm.
  • Leave one tablespoon of oil in the wok and fry the onion for approx. 2 minutes, then add the chicken chunks and fry till golden brown.
  • Add the satay sauce and peanuts to the wok and simmer for approx. 5 minutes, or until the chicken is fully cooked.
  • Place noodle pancake on a serving plate, spoon the chicken satay over the top and sprinkle with the coriander.
