NOODLE PANCAKE WITH SATAY CHICKEN RECIPE

Chicken thigh fillet cut into bite-size
chunks |

Instant chicken noodles with the flavor
sachet |

Cooking oil |

Satay sauce in bottles or jars |

Onion, sliced |
| 2 tbsp |
Fresh chives, chopped |
| 1 tbsp |
Peanuts, roughly chopped |
| 2 tsp |
Fresh coriander, chopped |
- Allow instant noodle to soften in a bowl of boiling water,
drain and set aside.
- Place noodles in a bowl, add in the flavor sachet and chives
and mix well, then divide in two batches.
- Heat oil in a wok and fry each batch, flattening out the
noodles to form a pancake shape. Turn the pancake over and repeat on the other side. Fry
until they are golden and crispy, then drain and keep warm.
- Leave one tablespoon of oil in the wok and fry the onion for
approx. 2 minutes, then add the chicken chunks and fry till golden brown.
- Add the satay sauce and peanuts to the wok and simmer for
approx. 5 minutes, or until the chicken is fully cooked.
- Place noodle pancake on a serving plate, spoon the chicken
satay over the top and sprinkle with the coriander.
