Also known as "black lentils', "black gram" or
"kali daal". This lentil-like beans have black skins but reveals a creamy
white interior. Whole udad daal derive their strong earthy flavor
from their black skins and is often used in curries. Udad daals are also
sold split with the skins intact in order for it to retain its earthy
flavor. Skinned variants are somewhat bland.
