Omelet With Chinese Sausage Recipe

A
simple and versatile egg dish that varies in flavor according to the filling
used. Experiment with ingredients such as dried mushrooms, ham and fresh onions
instead of shrimps and sausages, and you get a whole new flavor for the
dish !

Fresh eggs |

Shrimps, cooked and peeled. Head
discarded, tails intact |

White crab meat |

Chinese sausage, thinly sliced |
| 3 stalks |
Spring onion (scallion), chopped |
| 1 stalk |
Celery, diced |
| 2 cloves |
Small size garlic, finely chopped |

Vegetable oil |
| 2 tbsp |
Soy sauce |
| 2 tbsp |
Coriander (cilantro), freshly chopped |
| 2 tsp |
Ginger, freshly chopped |

Method :

Heat oil in pan over moderate heat. When hot add
ginger, garlic, spring onion and celery and cook for approx. 1 minute, stirring frequently,
until fragrant.

Add shrimps, crab meat and sausage slices, then
sprinkle with chopped coriander and drizzle a little of the soy sauce onto the mixture.

Reduce heat to low and allow mixture to heat
through, keeping in mind to stir frequently, then set aside.

Break the eggs into a large bowl and beat the
eggs vigorously, add a pinch of salt and divide equally into four portions.

Pour one portion, at a time, into the pan and
spread the egg evenly. Spoon one-quarter of the filling over the center of the omelet.

Allow to heat through, then fold or roll up the
omelet and serve immediately with some soy sauce or chili sauce to accompany.
