Steamed Shrimp In Wontan Skin Recipe

A dim sum delicacy with prawns or shrimps mixed with pork and steamed.

 

Ingredients

50 pieces Wontan skins
300 g Fresh shrimp. shelled and coarsely minced
200 g Pork with a little fat, finely chopped
25 pieces Medium-sized shrimp, shelled, de-veined and tails intact
1/4 tsp Pepper
1/4 tsp Sugar
1/4 tsp Salt
- 1 egg white, lighten beaten
 

The Marinade

 
5 pieces Water chestnuts, chopped
1 tbsp Spring onion, chopped
1 tbsp Coriander leaves, chopped
1 tbsp Corn flour
1/2 tbsp Chinese rice wine
1/2 tbsp Sesame oil
1 tsp Sugar
1/2 tsp Salt
1/2 tsp Pepper

 

Method :

  • Prepare marinade by mixing all the marinade ingredients together in a bowl.

  • Combine the minced shrimp and pork together and pour the marinade liquid to mix thoroughly. Work with your hands to be more effective, mix well until smooth, then allow to marinate for at least 30 minutes.

  • Season whole shrimps with one-quarter teaspoon of pepper, sugar and salt and set aside.

  • Take a wontan skin and put a spoonful of the filling onto the middle.

  • Place one shrimp on top of the filling.

  • Take another wontan skin, brushed lightly with egg white, and place over the shrimp and filling.

  • Seal the two wontan skins together by lightly pressing them, leaving the shrimp tail sticking out.

  • Prepare bamboo steamer by lightly greasing the inside to prevent the dumplings from sticking.

  • Arrange the wrapped shrimp dumpling on the bamboo steamer and cover the top.

  • Allow to steam over rapidly boiling water for approx.10 - 15 minutes.

  • Serve immediately with some sauce accompaniment - chili and sweet sauce.
