Crispy Fried Wontan Recipe

This
recipe will give you a mouthful of crunchy fried dumpling that is featured more
as an accompaniment to noodle dishes.

Ingredients |
| 120 g |
Fresh small sized shrimps |
| 50 pieces |
Wontan skins |
| 1 stalk |
Spring onion, finely sliced |
| 1 sprig |
Coriander leaves, chopped |
| 1 |
Egg white, lightly beaten |
| - |
Oil for deep frying |

The Seasoning |
|
| 1 tsp |
Light soy sauce |
| 1/2 tsp |
Sugar |
| 1/2 tsp |
Egg white |
| - |
A pinch of salt |
| - |
A dash of pepper |
Method :

Prepare shrimps by shelling, and discarding the
head and tail, rinse in cold water and dry with a kitchen paper, then proceed to cut each
shrimp into two to three pieces.

Mix with the spring onion and coriander leaves,
and season with the seasoning ingredients for at least 30 minutes.

Prepare seasoning by combining all the
ingredients together.

Place a wontan skin on the palm of your hand and
spoon a few pieces of the seasoned shrimps onto the center of the wontan skin.

In a gentle crumpling action, compress the
wontan in your palm, so that it looks like little crumpled balls when released, with none
looking alike. Proceed to do the same for the rest of the ingredients.

Brush the crumpled portion, where the wontan
skins come together, with a little egg white to seal it together.

Heat sufficient oil for deep-frying in a wok.
Deep-fry the wontan in batches by lowering them gentle into the hot oil and removing them
when they turn golden brown and crunchy.

Drain on a kitchen paper and serve with a chili
dip.
