Crispy Chicken Rolls Recipe

This is a very versatile recipe as the filling can be changed according to your needs and they are great for cocktail parties or buffet.

 

Ingredients

240 g Chicken breast meat
- 1 egg lightly beaten
- Plain flour
 

The Filling

 
180 g Pork, minced
100 g Shrimps, shelled and minced
2 tbsp Crab meat
2 pieces Water chestnuts
2 stalks Shallots, minced
1 stalk Spring onion, minced
1 piece Red chili, minced
1 tsp Light soy sauce
1 tsp Cornflour
1/2 tsp Sesame oil
1/4 tsp Five spice powder
1/4 tsp Salt
1/4 tsp Sugar
1/4 tsp Pepper
 

The Marinade

 
1 tbsp Water
1 tsp Light soy sauce
1 tsp Chinese rice wine
1/2 tsp Salt
1/4 tsp Pepper

 

Method :

  • Prepare marinade by combining all the marinade ingredients in a bowl, set aside.

  • Prepare chicken by slicing the meat into twelve thin slices. Marinate with the above for approx. 30 minutes.

  • For the filling, combine all the filling ingredients together in a large bowl. Work with your hands to ensure the filling are thoroughly mix and set aside in a refrigerator for approx. 30 minutes.

  • Spread out the chicken slices and place a teaspoonful of the filling in the center of each slice and roll up.

  • Dip chicken rolls in beaten egg and coat with flour.

  • Deep-fry the rolls in batches until golden brown.

  • Serve in a shallow plate and garnish with lettuce.
