Known as
Srikaya in its native Indonesia, this popular dessert keeps popping up all over
South-east Asia.
Ingredients
400 ml
Coconut milk
25 g
Sugar
25 g
Cellophane noodles, soaked in warm water for 5
minutes
4 pieces
Ripe banana, peeled and cut into small pieces
3
Eggs, beaten
5 tbsp
Water

Salt
-
Vanilla ice cream (optional)
Method :
Stir the coconut milk, water and sugar into the
beaten eggs and whisk well together.
Strain into a suitable souffle dish.
Drain noodle well and cut it into shorter
lengths with a pair of scissors, then stir noodles into the coconut mixture, together with
the chopped banana. Add a pinch of salt.
Cover the dish with a foil and place in a
steamer for approx. 1 hour or until set. Test by inserting a thin, skewer into the center.
Server hot or cold, on its own or topped with
vanilla ice cream.
