Fruits In Lychee Syrup Recipe

Popular oriental dessert of mix fruits in tangy lime and lychee syrup, topped by a sprinkling of fragrant toasted sesame seeds.

 

Ingredients

1 Ripe mango, peeled, stoned and sliced
1 Red apple, cored and sliced
1 Star fruit, sliced across
2 Just-ripe banana, chopped in medium-sized chunks
400 g Lychees in syrup (sold in cans)
120 g Fine castor sugar
300 ml Water
1 tsp Sesame seeds, toasted
- Juice of one lime

 

Method :

  • Prepare syrup by placing sugar, water and lime juice in a saucepan and heating gently until sugar dissolves.

  • Increase the heat to medium, then continue to boil for another 6 - 8 minutes, then remove from heat and set aside to cool.

  • Drain lychees but reserve the juice. Add the lychee juice to the cooled lime syrup.

  • Place all the cut fruits in a salad bowl and pour over the lime and lychee syrup.

  • Chill for approx. 1 hour. Before serving, sprinkle with the toasted sesame seeds.
